

Party Theme/Idea: Picnic in the Park. This picnic is for adults and it’s the perfect time to go to the park. Play volleyball, badminton, relay races. Set up a table with a hand painted umbrella.

Favorite Recipe: Roast Beef Salad with Horseradish Vinaigrette from Sallye Irvine and Bay Tables Cookbook from Mobile, AL
Ingredients:
2 cloves garlic, finely chopped
¾ cup olive oil
¼ cup white wine vinegar
¼ cup fresh lemon juice
3 tablespoons parsley, fresh chopped
1 teaspoon sugar
1 ½ tablespoons drained prepared horseradish
2 tablespoons heavy cream
Salt and pepper to taste
1 pint cherry tomatoes
1 ½ pound small red potatoes, boiled, cooled and cut into quarters
1 ½ pound cold cooked roast beef or steak, trimmed and julienned
1 cup thinly sliced green onions
2 tablespoons capers
Shredded Romaine lettuce
3 hard-cooked eggs, quartered
Preparation:
Combine the first 9 ingredients in a blender and blend well. Combine the remaining ingredients in a large bowl and toss well. Add the horseradish vinaigrette and toss to coat well. Season with salt and pepper. Mound on a platter lined with romaine lettuce and garnish with hard boiled eggs. Serves 8-10.
