

Party Theme/Idea: Biking Party. Gather friends and bike to your favorite watering hole (i.e. fun restaurant) Have a great lunch and then explore and bike some more (to work off the calories from lunch!).

Favorite Recipe: Fried Green Tomato Salad Napoleon with Lump Crabmeat from the Shimmy Shack
Ingredients:
4 green tomatoes
1 cup flour
2 eggs beaten with 1 tablespoon water to create egg wash
2 cups vegetable oil heated to 350 degrees
8 ounces mixed baby greens
1 pound lump crabmeat
2 ripe avocados
Herb Vinaigrette Dressing
Creole seasoning, to taste
Preparation:
Cut green tomatoes into ¾ -1 inch thick slices and dredge in flour. Put into egg wash and back into the flour mixture. Fry tomatoes in oil heated to 350 degrees, flipping until they are slightly brown on both sides. Drain on a paper towel and set aside. In a separate bowl, put the mixed baby greens, avocado, ¾ pound of the crabmeat and toss lightly with vinaigrette and creole seasoning. Put a layer of the greens, avocado and crabmeat mixture on top of a tomato, add another layer of greens mixture and lump crabmeat on the top. Serves 4.

Herb Vinaigrette Dressing
Ingredients:
7 cloves garlic, chopped
2 tablespoons dried or fresh thyme, to taste (fresh is better)
2 tablespoons black pepper or to taste
Creole seasoning, to taste
1 cup Dijon mustard
¾ cup apple cider
1 ½ cup olive oil
Preparation:
Mix ingredients in a blender except the oil. Add the olive oil slowly until it emulsifies. This makes 1 quart of dressing and keeps very well in the refrigerator.
